Tuna Steaks

Our daughter requested fish for dinner, so we obliged by getting some very nice looking tuna steaks.  We only buy fresh fish Tuesday thru Friday (read the book,  ‘Kitchen Confidential’ by Anthony Bourdain for a further explanation.  It is a very entertaining & informative read, by the way!).  I start by cutting the steaks into 6 ounce pieces and then marinading them for a hour or so (of course, refrigerate during this time).


The marinade is easy:  a 2:1 ratio of soy to teriyaki sauce, a couple of tablespoons of lemon juice, some sesame oil (be careful, a little goes a long way), some diced fresh onion & garlic and fresh ground black pepper to taste. After 1/2 hour, turn the tuna over to get both sides marinaded. When you’re ready to cook, remove the steaks from the marinade and coat them with sesame seeds, pressing down on each to form a nice crust .  Place the steaks on a hot grill that has been lightly oiled and cook for about 2-3 minutes per side (for steaks about 1 1/2 inches thick).  The middle should still be pink but slightly warm.  It’s that easy and very tasty!
