Slow cookin’ Carnitas

Darrol and I both work outside the home now, and with 3 teens in the house it’s important that we have a ready supply of dinners available.  We’ve been experimenting with the pressure cooker, but this morning Darrol pulled the crock-pot out to pull together a slow cooked meal.  We all love Mexican inspired food, so tonight it’s Carnitas.

Carnitas:  Makes 6 cups shredded meat

  • 2 Tbsp tomato paste
  • 2 Tbsp adobo sauce (we used the sauce from canned chipotle peppers in adobo, saving the peppers for another dish)
  • 3 Tbsp chopped garlic
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 3 lb round steak/roast, cut into 2 inch cubes (usually calls for Boston butt pork roast, but we had the beef on hand)
  • 1 cup beer or chicken broth (we used Darrol’s homebrewed cherry lambic beer)
  • (we  added about 1/2 can of green chilis)
  1. Combine the first 6 ingredients in the slow cooker then stir in the pieces of meat
  2. Microwave the beer in a 2-cup glass liquid measuring cup on HIGH 2 minutes or until very hot.  Pour beer over meat in slow cooker; do not stir.
  3. Cover and cook on high 1 hr and then on low 8 hours or until very tender.
  4. Remove meat and shred using 2 forks.  Serve hot, plain or in tacos.

Prep took about 10 minutes all told (had to open cans, haha).  The meat was tender and flavorful with a mild spiciness.  We made beef/cheese quesadillas (sorry, no pic, they were consumed too fast).  After shredding the meat I  put the sauce into a saucepan and reduced it down, then drizzled it over the quesadillas as they were cooking.  The  sauce kicked up the taste a bit.  This recipe is definitely a keeper!
